Valley wine country visitors come for the amazing food and wine. A few who want to take this experience a step further should check out the Culinary Institute of America’s Sophisticated Palate program.
The CIA at Greystone, located just north of the town of St. Helena, and roughly a mile south of the Wine Country Inn, offers throughout the year its four-day food and wine intensive, the Sophisticated Palate. Program highlights include cooking (in full chef’s attire) in a CIA kitchen with CIA chefs, excursions to local food producers and wineries, and dinners at various restaurants, including the CIA’s own Wine Spectator Greystone Restaurant.
Perhaps the highlight of the four-day program, limited to just 10 people, includes cooking and dining with legendary Sonoma County Chef John Ash. Chef Ash has been a leader in using fresh, seasonal ingredients for more than 25 years.
